✍️ Ingredients:
✔️ 3 cups shredded mozzarella
✔️ 1/2 cup full-fat cream cheese
✔️ 1 1/2 cup almond flour
✔️ 1 1/4 scoops Isopure Unflavored Whey Protein Powder
✔️ 2 large eggs
✔️ 1 teaspoon gluten-free baking powder
✔️ 2 tsp active dry yeast mixed in 2 tablespoons of warm water
✔️ 3 Tbsp everything seasoning ( optional )
✔️ wheat bread flavored liquid concentrate unsweetened (optional) 👉 Directions:
Preheat oven to 200 °C/ 400 °F

Place the mozzarella and cream cheese in a large microwave safe bowl. Microwave on high for 1 minute and 30 seconds. (You will need to use part-skim, pizza-style, low-moisture shredded mozzarella, not fresh mozzarella.) Stir and then heat in bursts of 30 seconds until the cheese is melted. Don’t overcook as you don’t want the oils to separate. In large bowl fit for a stand mixer with a hook attachment, mix together the almond flour, protein powder, baking powder, yeast mixture, wheat bread extract and 2 eggs.

Slowly, beat in the cheese mixture.  Beat until the dough is completely combined, scraping down the sides of the bowl as necessary.

Divide dough into 6 equal portions. Shape each portion into a doughnut shape. Place on prepared baking sheet.

Lightly beat 1 egg in a small bowl and brush it on to the tops and sides of each bagel. Garnish with the desired topping or leave plain.

Bake 12-15 minutes. If desired, broil for 1 minute to brown the top of the bagels.

Notes:
These bagels freeze well so you can make a large batch and reheat when needed.
We recommend using superfine almond flour and not regular almond flour.
